Potatoes To Die For
(just sit down and wait for the coronary...)
10 large russet baking potatoes, boiled
1 8oz package cream cheese, softened
1 8 oz tub sour cream
salt and pepper to taste
Place potatoes in a mixing bowl, and begin
mashing. Add cream cheese immediately so it melts quickly and is totally
incorporated. Beat until consistency you prefer, then add in the sour cream,
stirring until well mixed. Season to taste with salt and pepper.
Top with butter, and serve.

If you would like to ENSURE the coronary... these are also fabulous topped with finely grated cheese and crumbled bacon. Sometimes i serve this as a twice=baked potato casserole, and garnish it with added sour cream and chives.
